Easy Gut friendly homemade yogurt, grain-free, GAPS approved




This is a staple food at my house. I make it at least twice a week. This yogurt is easy to digest, gut friendly, packed with protein and kid approved. My kids like to drink it like a smoothy. Also a GAPS diet approved food.



Easy Gut Friendly Homemade Yogurt


Kitchen Tools:

  • large stainless steel pot with lid

  • stainless steel spoon

  • food scale or glass measuring cup

  • stovetop

  • food/candy thermometer

  • stainless steel whisk

  • large dehydrator with removable shelves and temp control

  • wire strainer/sieve

  • glass jars with lids for storage


Ingredients:

  • 2000ml pasteurized whole milk

  • 2/3 cup yogurt, from store bought plain or from previous batch



Directions:


Directions should always be short and to the point.

  1. Start by measuring out 2000ml of milk and add to a large pot on the stove top. Turn heat on to medium. Stir continually so the milk doesn't burn. Continue to heat until milk reaches 162 F then remove from heat.

  2. Place pot in cool water. I usually fill my kitchen sink and set pot in. You can add ice cubes to help keep water cool. Continue to stir until milk temp cools to 113 F.

  3. Place the pot of milk on the counter and add yogurt, gently whisk into milk until well incorporated.

  4. Put pot lid on and place inside the dehydrator (all the shelves should be removed) close dehydrator door and turn temp to 105 F. Keep on for 24 hours.

  5. Once 24 hours is up. Remove promptly. Stain the yogurt to remove any dried top layer. Store in glass jars in the fridge. Eat within 7 days.

  6. Be dure to save 2/3 cup of yogurt for the next batch. I usually set some aside when I'm putting the yogurt into jars so i don't eat it al up and forget to save some.


    Note: This is not Greek yogurt so it will probably have a runny consistency.
